To truly determine where the AC units draw their air from, I would need to look at the plans. Usually in these designs some portion of the air will need to be Make-up Air (i.e. from outside). Part of the problem may be that if the exhaust is to close to the intake on the roof, your Make-up Air may actually be recirculated air. There is always a percentage of leakage in any system, and you would never deplete the oxygen enough to cause problems unless a source of displacing gas (Carbon Monoxide, Dioxide) was placed near the intake.
